Using a candy thermometer makes it a little less touchy as you know exactly when it reaches 300 degrees (hard crack). You're right it takes a while! My recipe calls for 1/2 tsp. baking soda though instead of the salt, and I've always used chopped walnuts. It is indeed very yummy!
