Homemade Potato Chips Recipe

 Crispy, Crunchy, Light and Munchy

The other evening my husband dug the potatoes and brought them in from the garden. Because there are always a couple that manage to get stabbed by the potato fork, it was either throw them out or use them immediately. Kevin decided to use them immediately.

I was in the other room working on something, when I heard him get out a skillet and I went to see what was going on. He was making potato crisps (or chips)!  There are more uses for coconut oil, we have found, than simply using it as an ingredient in our soaps. Coconut oil is used in this house for making popcorn and for frying everything from peppers and onions to...potato crisps!

Kevin's already made two batches of potato crisps, and if I don't watch out, it will be the go-to treat for an evening movie. This is dangerous territory. At least the Ritter Dark Chocolate with Hazelnut could be thought of as a health food, considering all the antioxidants, right??  Not so sure about the potato crisps, but I'm pretty sure they're going to be a staple around this house.

Potato Crisps, Recipe:

Potatoes
Coconut Oil
Sea salt

Any number of good potatoes, washed and sliced VERY thin. (like 1 mm)

Melt coconut oil in a cast iron skillet until it's about 1/4 inch deep.  Cast iron seems to work best because it heats so evenly. (He used cast iron the second time.)

The burner was between Low and Medium, closer to Medium, but never higher than that.

Spread the potatoes out in a single layer on the oil. 

Fry them 2-3 minutes, turning at least once. As a layer of potatoes is fried, lift them off and place on a paper towel to drain. 

Sprinkle with sea salt.

Do this is very small batches so that the oil stays hot enough, and be ready with another layer of potatoes waiting, so that you don't leave the oil sitting on that hot burner without any potatoes in the pan. It wouldn't take long for it to burst into flame.

Keep children out of the kitchen while you're frying in oil. I have a horrific family story I could tell you about a cousin whose skin melted off when hot oil was accidentally spilled on her. Don't take chances; it's not worth it.

  9. Those look GREAT! Yes, I'm always careful when using oil even now when my kids are older and not under my feet anymore! I love the photo of your #1 grandson. You should do a followup photo! Enjoy your day and your chips!

    We just found an old electric deep fryer at an estate sale this summer. It makes frying so easy! (which probably isn't a good thing)

  24. I agree with your warning about children and frying. Hot bacon grease was dripped on my first born while sitting in a baby seat on the kitchen floor. Thank God it didn't do any damage.
