Gluten Free Oatmeal Cookies Recipe, Tommy and Smokey


Happy last day of June, everyone! It looks like we're going to have rain and thunderstorms until sometime Sunday. I'm looking forward to seeing sun again!

As requested, I'm posting the recipe for the oatmeal, coconut, and walnut cookies in the photo above, which some of you saw on Instagram. They're gluten-free and delicious.

Gluten Free Recipe, Oatmeal Coconut Cookies

This recipe makes about 3 1/2 dozen large cookies.
Preheat oven to 350 degrees.

Cream:
1 c. soft butter
1 c. brown sugar
1 c. white sugar  (Instead, I used about half the amount of sugar called for)
2 eggs
1 t. vanilla

Slowly mix in the following ingredients which have been measured and stirred in a separate bowl first:

2 c. Gluten Free flour (I use Bob's Red Mill One-to-One)
2 c. Gluten Free oatmeal (again, Bob's Red Mill)
2 c. Coconut
2 t. Baking Powder
1 t. Baking soda
1 t. Salt

Lastly, stir in 1 c. chopped walnuts.

Drop by shooter marble size balls onto greased jellyroll pans.
Bake 12-13 minutes until they are set and not wet, but don't let them get too golden.
I always smack the pan on the top of the cookstove to flatten out the cookies a little faster and I let them cool on the pan (finish baking) before removing from pan.

  3. I skipped the recipe and the cookies and went straight to looking at the chair pad. I love tropical prints and black is my favorite color. that is beautiful, then I found all that sweetness cuddling on the glider with the same print. beautiful prints and sweet kitties. I wonder if scones have sugar in them.

  5. Sandra, personally I like scones better and they take very little sugar. I bet they could be almost sugar free if there were something like dried cherries in them.

  6. Our forecast sounds just like yours. Sigh ... I'm not sure I ever remember a summer with so many rainy days. It seems to rain part of every day.

    The cookies look similar to my favorite oatmeal cookie recipe, which I think was called oatmeal crispies (but they weren't very crisp -- more chewy).

    Tommy and Smokey -- adorable. And inseparable, it looks like.

  11. Kate, if you use the Search Bar on my blog sidebar and type in gluten free bread, you'll get my favorite recipe for homemade gluten free bread. It's got a nice crusty crusty (which I love), but these days I usually buy Aldi GF Multi-grain bread. I love it for sandwiches especially, but I'll have to admit that the homemade GF bread makes better toast.

  16. The cookies look yummy. We have a male friend who makes something similar every week for his nighttime snack. They are so good, and he brings them when he comes to dinner so he has a dessert. Hope you have a wonderful weekend with no rain and lots of fun family times.
