These cookies are fun to make, easy, cute, and would be a great project with the kids.
Ingredients:
4 oz. Semi-sweet Chocolate Chips
2/3 c. butter
Melt these together.
Then stir in:
3 c. GF flour (I use a combination of 2 c. white rice flour, 2/3 c. tapioca flour, and 1/3 c. potato starch)
1 c. sugar
1/2 c. milk
1 t. vanilla
2 eggs, beaten
Spray waffle iron with a gluten-free cooking spray. Pre-heat to LOW setting.
Drop batter by spoonfuls onto hot waffle iron. Bake (press??) for 3 minutes.
Open waffle iron and gently remove cookies with a fork. Place on waxed paper or racks to cool.
When cool, melt together to make a glaze of:
4-5 oz. Semi-sweet chocolate chips (No, you don't need a scale. I happen to have one because I have to measure ingredients for my soaps - and my chocolate chips are in a huge glass jar. In the photo above, the few extra chocolate chips to the left of my recipe are to motivate the baker, an essential part of making these cookies!)
1-2 t. shortening
Drizzle over cooled cookies. Place a pecan half on the top of each. Okay, this doesn't look like a turtle now, but I like the pecan effect. You can improvise if you want. :-)
My waffle iron has an inscription etched into the underside: 'Made by Tubal-Cain.' It is ancient and refused to be photographed.
For my gluten-free flour, I keep on hand a ziploc baggie with a mixture of the following flours:

ReplyDeleteI love this and that it's gluten free! These look so good, I love turtle candies and have made a turtle chocolate cake before, yum! I have many friends with allergies or who have kids with allergies. Thanks for the tip.
ReplyDeleteI cannot believe how good those look!!!
ReplyDeleteOh wow, yummy! i bet they would be good with a drizzle of caramel too. It's super hot here in Oregon so I love that you dont have to use the oven to make these cookies! Have a great day!
ReplyDeleteI agree with the caramel comment...drizzle these with caramel and chocolate and you've got me excited!
ReplyDeleteOkay, I was actually going to use caramel, but was afraid I couldn't get it to set up - that it would remain sticky. Got any ideas?
ReplyDeleteOoooh! YUM! I can see where I need to stay away from Tempt My Tummy Tuesday if I'm going to lose any weight!
ReplyDeleteThey look dee-licious.
I am so impressed that you can actually keep your chocolate chips in a huge glass jar and not eat them all! i need to keep my hidden from myself!
ReplyDeleteHmmm...good point about the caramel. If you maybe used those caramel candies (you know...the individually wrapped little blocks) those might set up nicely. I've never tried it.
ReplyDeletePS - The list of your favorite books on your profile could double as my list as well. How fun!
The end result of your food always looks so professional...like the way it would look on the picture in a menu!
ReplyDeleteNot only does the photo look fantastic...I would like everyone to know that these cookies taste FANTASTIC! I will make them even though I am not gluten intolerant. Thank you my friend for sending some home, as Mike loved the taste. He too thought they tasted like a nice shortbread. :)
ReplyDeleteI love that they're gluten free - but there's no way I'm going to get my cookies to look like that - it just won't happen. But that's not stopping me from grabbing this recipe and seeing what I can do. Thanks! This is a great thing to share.

Yummy! I am sending this on to one of my friends who has to eat gluton-free foods! I might have to add it to my list of things to make when I get a chance to breathe around here!

Great idea, I never thought of using our waffle iron this way. Do you substitue your GF flour in other recipes without further adaptations?
