Yummy MOUNDS BARS!

If you enjoy making a pan of bars that will vanish in about an instant, this is the recipe for you. I have made this recipe for a couple occasions recently and they are loved by everyone who likes coconut, dark chocolate, and excessive sweetness.

Here's the recipe for a 13 x 9 cake pan:

2+ c. crushed Graham crackers
1/2 c. sugar
1/2 c. melted butter.
Mix together, pan into pan. Bake in 350 degree oven for 10 minutes.

In a bowl, mix 4 c. shredded or flake coconut, 2 cans sweetened condensed milk. Spread this mixture over the top of the baked crust.  Place back into 350 degree oven. Bake until coconut is lightly browned. This will take 20 minutes or so.

In microwave or in a pan on the stove, melt 2 c. semi-sweet chocolate chips and 1/4 c. peanut butter. Spread over top of bars.
 
Cut when cool. After they've reached room temperature, you may need to place them in the refrigerator for a bit to set the chocolate. Then they can be out at room temperature again.

  1. I have a similar recipe--these are amazing. But it's kinda bad because my hubby doesn't care for coconut, so I end up eating the whole pan. :)

  2. Oh my word... this will be the death of me!!! Those look SOOOO good.

    I wanted to tell you thanks for the tip on netflix. I just discovered Foyle's War on PBS, but then realized that it's the final season, apparently! ha! I also like Inspector Lewis, and of course Midsomer Murders. If it wasn't for the kids, I think I might just do Netflix and get rid of our satellite, which just went up in fees AGAIN. It's too expensive, and I hate the tv being on anyway. We only have 1, right in the middle of the house. I get sick of the noise. I don't let the kids watch a whole lot, but I have 3 kids who want to watch different things, so guess what? It gets ridiculous for ME.

    I love a British mystery on a Sunday night. Things are usually calm, the lists are usually done for the week (ah, that blessed moment!), and I'm usually mentally ready to settle down and watch something. I have a hard time focusing on anything for 2 hours during the week. And once I sit down for even 30 minutes, I'm toast! "Just keep swimming..." ;)

    This is not necessarily a good thing. I feel driven, sometimes. But maybe having something simple like that to look forward to (a smart, well-made, interesting movie) might help me to take some time to smell the roses. :) I love reading, but again... if I'm tired and start to read, I'm out. So - yes, netflix might be a good thing. I'm going to check that out!

  3. I can tell you from personal experience that it's not unusual to eat way too many of these Mounds Bars at a sitting. You can find yourself saying, 'Oh these are just horrid rich' as you're shoveling another one out of the pan! :-)

    I think the new Foyle's War movies that were on PBS just became available on Netflix on June 1. :-)
