If you enjoy making a pan of bars that will vanish in about an instant, this is the recipe for you. I have made this recipe for a couple occasions recently and they are loved by everyone who likes coconut, dark chocolate, and excessive sweetness.
Here's the recipe for a 13 x 9 cake pan:
2+ c. crushed Graham crackers
1/2 c. sugar
1/2 c. melted butter.
Mix together, pan into pan. Bake in 350 degree oven for 10 minutes.
In a bowl, mix 4 c. shredded or flake coconut, 2 cans sweetened condensed milk. Spread this mixture over the top of the baked crust. Place back into 350 degree oven. Bake until coconut is lightly browned. This will take 20 minutes or so.
In microwave or in a pan on the stove, melt 2 c. semi-sweet chocolate chips and 1/4 c. peanut butter. Spread over top of bars.
Cut when cool. After they've reached room temperature, you may need to place them in the refrigerator for a bit to set the chocolate. Then they can be out at room temperature again.
