Strawberry Shortcake Gluten Free Recipe



I told you I was going to make strawberry shortcake, didn't I!  Well, I couldn't wait. I did find a gluten-free recipe online, but I didn't have those ingredients, so I tweaked it a bit a lot and went with what I had in the house and cut down on the sugar. Also, those who had used that recipe complained that the shortcakes spread all over the pan, making them flat. Aha! I'll round up them doggies by baking them in a muffin tin! It worked great.

Strawberry Shortcake Gluten Free Recipe:

Makes 8 shortcakes.

Strawberries fresh, stemmed, washed, and sliced. Mix a tiny bit of sugar in. These berries were so sweet they probably didn't need any, but I did put in a sprinkling.

2/3 c. white rice flour
2/3 c. potato starch
2/3 c. tapioca flour

1/3 c. Crisco shortening 
1 T. baking powder
1/4 baking soda
1/4 xanthan gum
1/2 t. salt

1/2 c. sugar
3/4 c. milk 

Stir together the flours, potato starch, baking powder, baking soda, xanthan gum, and salt.
Cut in the shortening until it's very fine.
Mix in the sugar.
Drizzle in the milk and mix gently.

Pour by globs into muffin tin that's been sprayed with a no-stick cooking spray.

Bake 425 for 12 minutes (longer or shorter, depending upon your oven)
(I put a little water in the muffin tins that were empty)

As soon as they come out of the oven, turn them a bit, just to make sure they won't stick.

Slice in half and top with berries.

Personally, I don't like to ruin it with whipping cream.


Don't disparage my muffin tins.
They're old and discolored, but they work.

Oh. And when I sliced them, I did put REAL Wisconsin butter on each half before adding the berries. We're going all out here!

Had to send this link along to a friend. Had to laugh that you don't want to ruin it with whipped cream. My preference is strawberries with heavy cream poured over the top leaving out the biscuit and the butter. I have a number of muffin tins that look that way. They're my favorites.

My muffin tins look just like yours, and I have three of them. I am adjusting my brain to begin a low-carb lifestyle, after we get through the 4th of July. I bought almond flour and flax seed flour last week. A new recipe book will get used daily. Back to lots of salad and green munchies. I enjoy reading you gluten-free recipes, but this one has a lot of carbs, I'm guessing. The strawberries look so good!

This might be next on the list! We have also been getting quite a bit of homegrown strawberries. Yesterday, since the strawberries looked a little sad we made freezer jam. Absolutely scrumptious! The previous batch we made a strawberry pie.

So true, Terri, this is not a low-carb dessert. But sometimes it's just worth it. On the other hand, I'm trying to make up for it today by eating a ground round pattie with onions (and nothing else on it) this noon. It all evens out, in my opinion, if I don't indulge too often. :-) And although I usually eat relatively sugar free and almost always gluten-free because wheat makes my stomach crawly, I do not eat low fat. I'm convinced that sugar is the main culprit behind many diseases. (Now watch me die of some rare disease tomorrow!)

Oh my!! You have my mouth watering!! Just returned from costco and have a big ole container full of strawberries!! Your recipe looks great, but I'm not a cook, so I have an angle food cake and will cut it up into small pieces, squish up my strawberries to make it juicy and poor the squished berry over the cake and add some dream whip!!
