Happy last day of June, everyone! It looks like we're going to have rain and thunderstorms until sometime Sunday. I'm looking forward to seeing sun again!
As requested, I'm posting the recipe for the oatmeal, coconut, and walnut cookies in the photo above, which some of you saw on Instagram. They're gluten-free and delicious.

Gluten Free Recipe, Oatmeal Coconut Cookies
This recipe makes about 3 1/2 dozen large cookies.
Preheat oven to 350 degrees.
Cream:
1 c. soft butter
1 c. brown sugar
1 c. white sugar (Instead, I used about half the amount of sugar called for)
2 eggs
1 t. vanilla
Slowly mix in the following ingredients which have been measured and stirred in a separate bowl first:
2 c. Gluten Free flour (I use Bob's Red Mill One-to-One)
2 c. Gluten Free oatmeal (again, Bob's Red Mill)
2 c. Coconut
2 t. Baking Powder
1 t. Baking soda
1 t. Salt
Lastly, stir in 1 c. chopped walnuts.
Drop by shooter marble size balls onto greased jellyroll pans.
Bake 12-13 minutes until they are set and not wet, but don't let them get too golden.
I always smack the pan on the top of the cookstove to flatten out the cookies a little faster and I let them cool on the pan (finish baking) before removing from pan.

A little spark of serenity...ahh!
Your oatmeal cookies look yummy, especially when paired with something in those gorgeous mugs!
What a precious picture of Tommy and Smokey! Love them!
I skipped the recipe and the cookies and went straight to looking at the chair pad. I love tropical prints and black is my favorite color. that is beautiful, then I found all that sweetness cuddling on the glider with the same print. beautiful prints and sweet kitties. I wonder if scones have sugar in them.
Cookies, tea and those two. *love*
Sandra, personally I like scones better and they take very little sugar. I bet they could be almost sugar free if there were something like dried cherries in them.
Our forecast sounds just like yours. Sigh ... I'm not sure I ever remember a summer with so many rainy days. It seems to rain part of every day.
The cookies look similar to my favorite oatmeal cookie recipe, which I think was called oatmeal crispies (but they weren't very crisp -- more chewy).
Tommy and Smokey -- adorable. And inseparable, it looks like.
Cookies sound good. Cute photo of Tommy and Smokey. Have a wonderful weekend.
Hello, your cookies look yummy. I like the cute mugs too. Sweet kitties.
I hope you have a wonderful month of July. Happy Friday, enjoy your weekend!
I just sent your link to my gluten-free buddy. They look delish!! Your mugs are positively darling. Have a fabulous weekend, dear Judy.
This looks like a tasty recipe just waiting for me to try it on this gray and cold June 30th in the UP. I'm wondering if you have a favorite gluten free bread recipe?
Love your blog Judy!
Kate, if you use the Search Bar on my blog sidebar and type in gluten free bread, you'll get my favorite recipe for homemade gluten free bread. It's got a nice crusty crusty (which I love), but these days I usually buy Aldi GF Multi-grain bread. I love it for sandwiches especially, but I'll have to admit that the homemade GF bread makes better toast.
Judy, That is a good recipe...if you can use half the sugar..even better. I love seeing your cats. :):) Blessings for a great weekend. We will have rain too then sunshine and rain again on the 4th.boo. Blessings, xoxo, Susie
Tommy and Smokey are so cute. You always get the greatest pictures of them. Hope you have a great weekend Judy.
Tommy and Smokey are the cuddle twins--adorable! Your cookies sure sound delicious and would be lovely for afternoon tea on your porch set so lovely. You know I love your EB mugs and the adorable tea towel. Have a happy weekend, my friend.♥
The cookies look and sound delicious! The kitties are sweethearts! I have two that do the same thing and I'm always snapping pictures of them cuddling. Looks like you had a nice family venture! I think the chances of rain for us have finally diminished enough not to feel much of a threat. Have a great weekend and a very Happy 4th!
The cookies look yummy. We have a male friend who makes something similar every week for his nighttime snack. They are so good, and he brings them when he comes to dinner so he has a dessert. Hope you have a wonderful weekend with no rain and lots of fun family times.
The cookies do look good. Thankfully I don't have a problem with Gluten so I don't have to fix food a special way. - Oh my the kitties are just so cute & boy have they grown.
I love that your cats snuggle all the time. None of ours like each other enough to do that. Our Amber and Inky did, but they have been gone several years now.
