GF Peanut Butter Cookies Recipe

 Delicious Gluten-free Peanut Butter Cookies

What to do. The gluten-free chocolate chip cookies were gone, and I like to have some gluten-free treat in the freezer. So, I decided to make peanut butter cookies this time. I have no idea how many calories they have, but I do know that I needed to eat a high protein dinner, for lunch pretty much consisted of peanut butter cookies. Don't tell anyone.

Next month I'll be making Christmas Stollen and freezing it.  Must get the ingredients soon.


Peanut Butter Cookies - Gluten Free Recipe:

1/2 c. butter
1/4 c. regular Crisco shortening
1 1/4 c. light brown sugar
3/4 c. peanut butter
1 egg
1 T. vanilla

1 c. fine rice flour
1/2 c. potato starch
1/2 c. tapioca flour
1 t. baking powder
3/4 t. baking soda
1/4 t. salt

Cream wet ingredients. Add (mixed) dry ingredients and mix well.





Form into walnut-size+ balls. Place 2-3 inches apart on cookie sheet. (I use heavy jelly roll pans and get a dozen cookies on each.)

Bake 350 degrees for 12 minutes. After taking them out of the oven, let them cool on the cookie sheet before removing them. I baked the first batch at 375 for 10 minutes, but they didn't get done enough or dry enough for me.

The first photo includes a few of the cookies that I pressed with a fork before baking.

Of course, you can also use this recipe to make Hershey peanut blossoms. To do so, as soon as the cookies are out of the oven, press a Hershey kiss into the top of each one. Who doesn't like those, right??

This batch made 2 1/2 dozen 2 in. cookies. The full 2 1/2 dozen did not make it to the freezer, however, in spite of my good intentions.

These are very good, and are more like peanut butter shortbread. SO tender!

Keebler French Vanilla Creme Cookies

Keebler French Vanilla Creme Cookies, the kind made by elves, was my all-time favorite cookie! Where are they?? It seems that they've not been around since the '70s??? I can't even find a photo of the package, even though I did a Google image search! Evidently no one out there is saving an unopened package for a future episode of Antiques Roadshow.

Is there anyone else who remembers Keebler French Vanilla Creme Cookies? Anyone else who still misses them? Anyone who knows why on earth Keebler would take them off the market?

Have you tried the Keebler Vienna Fingers? Are they as good?  (Like I really need to find another cookie I like.)

And what about the windmill cookie? When I was little, it was one of my favorites too. I don't remember the brand. It had not only a great flavor, but a really good crunch and slivers of almonds (I think). When I was probably 10 years old, our family spent a few days at a resort and those cookies were sold at the little store near the lake. Maybe that's why they seemed to taste so good. Who knows.  Alas, the windmill cookies I find now do not compare in taste, crunch, or thickness. I have become a windmill snob.

Are there any foods from your past that you miss? Am I the only one who longs for a cookie I shouldn't be eating anyway???

Waffle Turtle Cookies! Gluten Free


These cookies are fun to make, easy, cute, and would be a great project with the kids.

Ingredients:

4 oz. Semi-sweet Chocolate Chips
2/3 c. butter
Melt these together. 


Then stir in:
3 c. GF flour (I use a combination of 2 c. white rice flour, 2/3 c. tapioca flour, and 1/3 c. potato starch)
1 c. sugar
1/2 c. milk
1 t. vanilla
2 eggs, beaten


Spray waffle iron with a gluten-free cooking spray. Pre-heat to LOW setting.
Drop batter by spoonfuls onto hot waffle iron. Bake (press??) for 3 minutes.
Open waffle iron and gently remove cookies with a fork. Place on waxed paper or racks to cool.

When cool, melt together to make a glaze of:
4-5 oz. Semi-sweet chocolate chips (No, you don't need a scale. I happen to have one because I have to measure ingredients for my soaps - and my chocolate chips are in a huge glass jar. In the photo above, the few extra chocolate chips to the left of my recipe are to motivate the baker, an essential part of making these cookies!)
1-2 t. shortening

Drizzle over cooled cookies. Place a pecan half on the top of each. Okay, this doesn't look like a turtle now, but I like the pecan effect. You can improvise if you want. :-)

My waffle iron has an inscription etched into the underside:  'Made by Tubal-Cain.' It is ancient and refused to be photographed.

For my gluten-free flour, I keep on hand a ziploc baggie with a mixture of the following flours:
  • 6 c. white rice flour
  • 2 c. tapioca flour
  • 1 c. potato starch
That way, I've always got a GF flour ready to use for cookies and cakes.
